Which type of cheese?


Cheese is a concentrated form of milk containing most of the nutrients found in milk. It contains as much protein and more calcium per ounce than the other main body building foods and it is also a rich source of vitamin A.
 

Below I have listed the 9 varieties of cheese produced in England and Wales, with description and pictures so you can easily identify them.
 


Caerphilly

Creamy white, with a moist and crumbly texture and a mild flavour.

Cheddar

Creamy yellow, close and smooth textured with the flavour ranging from mild to rich depending on the maturity. Cheddar cheese has been made in the shadow of the Mendip Hills, near to the Cheddar Gorge, since the 16th century. During the reign of Elizabeth I, William Camden wrote that it was a "prodigious cheese of delicate taste." These days it is also made in Wiltshire, Dorset and elsewhere.

Cheshire

White or red or blue, loose and crumbly texture, with a slightly salty, tangy flavour. This famous cheese has been manufactured in the county of Cheshire since the Middle-Ages.

Derby

Pale honey colour with a firm texture and milk flavour. Sage Derby is green marbled and flavoured with sage leaves

Double Gloucester

Golden coloured, smooth textured and full flavoured.

Lancashire

Soft white crumbly cheese with a mild and creamy flavour.

Leicester

Bright, reddish colour, smooth texture and mellow favour

Stilton

Blue veined or white with a soft and moist texture. Blue is rich and creamy, white has a fresh and mild flavour

Wensleydale

Creamy white with a flaky texture and a mild creamy flavour.
